I put this sentence of Maurice Béjart in the spotlight because I am deeply convinced that agriculture is one of the most important topics that we now have to worry about. Of course, cities and commerce have been, and will remain for a long time, essential factors in the development of civilization, but the problems facing humanity today, the qualitative leap of "conscience" that we must engage to keep the Earth able to support us goes through a radical "update" of our relationship to the environment.
