Description
Castel Serranova is a cru whose grapes come from a vineyard surrounded by dry stone walls designed to mark the threshold between the dynamism of the various elements of the surrounding nature reserve and the placid succession of seasons that will bring the grapes to maturity. The vineyard, called Vigna Castello, is the source of the most classic of Salento blends, Negroamaro and Susumaniello, with the latter predominating.
Tasting
Eye : Intense ruby colour with violet hues.
Nose : complex, intense and persistent, characterised by notes of ripe cherries, blackberries, redcurrants, spices and balsamic notes.
Mouth : harmonious, voluminous, with a solid body and a thick, silky tannic structure and texture.
Food and wine pairing : goes well with beef, roasted or grilled lamb, game, braised meats.
