Such exceptional years allow the Mourvèdre to fully express its noble flavour qualities combining fruit concentration, intensity and finesse. For Château d'Aqueria Héritage, the grape bunches are partially de-stemmed prior to long vatting times of up to 4 weeks.
Cap-punching and rack and return operations are frequent during the first weeks, unleashing all the aromatics and flavour contained in the wine. Depending on the vintage quality, the wines are aged for 12 to 16 months in French oak.
During their stay in barrel the wines are tasted regularly to accurately assess the evolution of this outstanding blend. Ultimate blending takes place then the Héritage cuvée is bottled at the Château
