Description
On a very draining soil, formed of stony screes of Argilo-limestone origin, resulting from the disaggregation of the rock, specific to this part of the Alpilles, the vines grow and mingle with the surrounding garrigue in a harmonious balance.
The "mistral" persisting in this region promotes a good health and the exchange of aromas.
Tasting
Appearance: Red, rich and intense. The dress is remarkable of a deep and dense garnet.
Aroma: A classic of the terroir so much one finds the spicy aromas of garrigue: thyme, rosemary, laurel and wild arugula.
Palate: The bouquet of black fruits are so dense that one imagines them confit, blackberry, cherry and even griottes confit in the water of life. The mouth leaves no doubt about the wonderful sunshine that the clusters have received. This generosity is found in the mouth, one is dense and balanced both with the power that the terroir des Baux gives. A long wine on the palate that really deserves its tasting.
Food pairing: Perfect for barigoule artichokes, lamb leg and ratatouille, wine rooster, red and white meat...
Service: Serve from 14°C. Potential custody from 5 to 10 years.
